Ingredients:
1-2 tablespoons desiccated coconut
1/4 cup cocoa
1/4 cup vanilla Sustagen powder or protein powder
1/2 cup almond meal
125g – usually 1/2 a packet of plain sweet biscuits – eg. marie biscuits – crushed – see hint below
1 x 400g can sweetened condensed milk
Extra desiccated coconut – enough to cover a flat tray
Utensils:
mixing bowl – big one
2 x flat tray
wooden spoon
measuring jug
soup/dessert spoon
1 x large zip lock bag
How to:
Place first five ingredients into the mixing bowl. Stir with wooden spoon. Add condensed milk and stir again until all ingredients are mixed. Should be a firm but pliable consistency. Sprinkle extra coconut on flat tray. Grab spoonfuls of mixture with the soup/dessert spoon, roll into balls, then roll around in the coconut and place on clean flat tray. Place in fridge overnight. Ready for an on the go breakfast or any time for that matter. Store in the fridge.
Hint:
You can roughly crush the biscuits by whacking them with the wooden spoon in a zip lock bag. They add texture to the balls if they are roughly crushed into larger pieces.
